- 2 Vegetarian chicken patties, Morning Star Farms or Boca brands
- 1cup Raw asparagus, diced
- 1cup Green fennel, tender stems and leafy fronds, chopped
- 1/4 cup Red onion, finely diced
- Salt, pepper, and mayo to taste
- Bread: Arnold’s Healthy Multi Grain
