Heather's Chicken Fennel Salad

Heather’s Chicken Fennel Salad

  • 2 Vegetarian chicken patties, Morning Star Farms or Boca brands
  • 1cup Raw asparagus, diced
  • 1cup Green fennel, tender stems and leafy fronds, chopped
  • 1/4 cup Red onion, finely diced
  • Salt, pepper, and mayo to taste
  • Bread: Arnold’s Healthy Multi Grain
I brought this to our May meeting prior to the tour.
The measurements are rough estimates since I was
experimenting :) I’m just tickled so many folks
enjoyed it!
